Banana-Berry Muffins

These banana-berry muffins are great for everyone in the family. Even your youngest eater in the house will appreciate these healthy muffins. In our house we often eat them for days straight from the fridge with a little peanut butter on top for added protein, but jelly, or even a little butter would be nice too. No sugar added muffins that everyone can enjoy? That's a win in our book!

Ingredients

  • 1 cup mashed very ripe banana
  • 1 large egg
  • ¼ cup diced strawberries
  • ½ cup blueberries frozen or fresh
  • 1/4 cup melted coconut oil cooled slightly
  • 1 cup milk dairy or non-dairy
  • 1 teaspoon pure vanilla extract
  • 1 ¾ cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1/8 teaspoon salt
  • Oil spray or Paper liners

Instructions

  • Preheat your oven to 375°F and line two muffin tins with paper liners or spray with oil.
  • In a medium bowl, mash the banana with a fork until smooth.
  • Add the egg, diced strawberries, blueberries, coconut oil, milk, and vanilla extract. Stir until all ingredients are combined.
  • In a separate bowl, combine the flour, cinnamon, baking powder, baking soda, and salt.
  • Slowly add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  • Divide the batter evenly among the prepared muffin tin and bake for 18-20 minutes, or until a toothpick or knife inserted into the center comes out clean.

Notes

If you don't have blueberries or strawberries on hand you can substitute another diced fruit or leave them out altogether and the muffins are still delicious. Store in an air-tight container in the refrigerator for up to 5 days or you can freeze the muffins once they have cooled.
