Beef Italian Sandwich

Ingredients
  

  • 1 pound thinly sliced roast beef
  • 4 Italian-style sub rolls or baguettes
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced bell peppers green, red, or yellow
  • 1/2 cup sliced onions
  • 4 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a skillet over medium heat, add 2 tablespoons of olive oil. Once heated, add the sliced bell peppers and onions. Sauté them until they become tender and slightly caramelized, about 5-7 minutes. Set aside.
  • In the same skillet, add the remaining 2 tablespoons of olive oil and minced garlic. Sauté until fragrant, about 1 minute.
  • Add the thinly sliced roast beef to the skillet, season with salt, pepper, and dried oregano. Cook for 2-3 minutes, just until the beef is heated through and coated with the flavors.
  • Split the sub rolls or baguettes lengthwise, but not all the way through. Place them on a baking sheet.
  • Spread marinara sauce evenly on both sides of the rolls.
  • Divide the sautéed bell peppers and onions among the rolls, placing them on one side.
  • Place the seasoned roast beef on the other side of the rolls, dividing it equally.
  • Sprinkle shredded mozzarella cheese over the roast beef.
  • Carefully fold the sandwich together, pressing it slightly to keep the ingredients intact.
  • Place the baking sheet with the sandwiches in the preheated oven. Bake for about 10 minutes or until the cheese is melted and bubbly.
  • Remove the sandwich from the oven and let it cool for a few minutes.
  • Slice the sandwich into individual portions and serve warm.
