Equipment

  • Frying pan
  • 2 Bowls
  • Forks

Ingredients

  • 2 cod fillets
  • Salt and pepper to taste
  • 1 teaspoon dried dill or fresh dill, chopped
  • 1 cup buttery crackers your favorite brand, crushed into fine crumbs
  • 2 large eggs beaten
  • 2 tablespoons olive oil
  • 2 tablespoons ghee clarified butter

Instructions

  • Prepare the Cod Fillets:
  • Start by rinsing the cod fillets under cold water and pat them dry with paper towels. This ensures the fillets are clean and moisture-free.
  • Season the Cod:
  • Season both sides of the cod fillets with a pinch of salt, freshly ground black pepper, and the dried dill. Make sure to evenly distribute the seasonings.
  • Crush the Butter Crackers:
  • Place the buttery crackers in a plastic bag and crush them into fine crumbs using a rolling pin or the back of a heavy pan. Transfer the crumbs to a shallow bowl or plate.
  • Beat the Eggs:
  • In a separate shallow bowl, beat the eggs until well combined. This will be your wet mixture for coating the cod fillets.
  • Coat the Cod Fillets:
  • Dip each cod fillet into the beaten eggs, allowing any excess to drip off.
  • Next, coat the cod fillets with the crushed buttery cracker crumbs, pressing the crumbs onto the fillets to ensure they adhere well. You can repeat this step for a thicker coating if desired.
  • Heat the Cooking Fats:
  • In a large skillet or frying pan, heat the olive oil and ghee over medium-high heat. The combination of olive oil and ghee will provide a delicious flavor and help achieve a crispy crust.
  • Pan-Fry the Cod:
  • Once the fats are hot and shimmering, carefully place the coated cod fillets into the pan. Be cautious not to overcrowd the pan; cook them in batches if necessary.
  • Fry the cod fillets for about 3-4 minutes on each side, or until they turn golden brown and are cooked through. The exact cooking time may vary depending on the thickness of your cod fillets.
  • Drain and Serve:
  • Using a slotted spatula, transfer the pan-fried cod fillets to a plate lined with paper towels to drain any excess oil.
  • Garnish and Serve:
  • Garnish the buttery cracker battered cod with a sprinkle of fresh dill or a squeeze of lemon juice for extra flavor.
  • Serve your delicious cod fillets hot with your choice of side dishes, such as steamed vegetables, coleslaw, or a fresh green salad.
