Cottage Cheese Stuffed Peppers

Ingredients
  

  • 4 large bell peppers any color
  • 1 cup cooked quinoa or rice
  • 1 cup cottage cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped sun-dried tomatoes
  • 1/4 cup pitted and chopped Kalamata olives
  • 2 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Cut off the tops of the bell peppers and remove the seeds and membranes. Rinse the peppers and set them aside.
  • In a mixing bowl, combine the cooked quinoa or rice, cottage cheese, feta cheese, parsley, sun-dried tomatoes, Kalamata olives, minced garlic, olive oil, dried oregano, salt, and pepper. Stir well to combine all the ingredients.
  • Stuff each bell pepper with the cottage cheese mixture, pressing it down gently with a spoon to fill the pepper completely. Place the stuffed peppers in a baking dish.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • After 20 minutes, remove the foil and continue baking for an additional 10 minutes, or until the peppers are tender and slightly browned.
  • Once cooked, remove the stuffed peppers from the oven and let them cool for a few minutes before serving.
  • Serve the Mediterranean stuffed bell peppers warm as a main dish or as a side dish with a salad or crusty bread.
