Ingredients
  

  • 1 cup cottage cheese
  • 4 large eggs
  • 1/2 cup rolled oats
  • 1 tablespoon sweetener of your choice such as honey or maple syrup
  • 1/2 teaspoon baking powder
  • Cooking spray or butter for greasing the pan
  • Optional toppings: fresh fruits honey, yogurt, or maple syrup

Instructions
 

  • In a blender or food processor, combine the cottage cheese, eggs, rolled oats, sweetener, and baking powder. Blend until you have a smooth batter consistency.
  • Preheat a non-stick frying pan or griddle over medium heat.
  • Lightly grease the pan with cooking spray or a small amount of butter.
  • Pour about 1/4 cup of the batter onto the preheated pan for each pancake. Use the back of a spoon to spread the batter into a round shape.
  • Cook the pancakes for approximately 2-3 minutes, or until bubbles form on the surface.
  • Carefully flip the pancakes using a spatula, and cook for an additional 1-2 minutes on the other side, until golden brown.
  • Transfer the cooked pancakes to a plate and cover with a clean kitchen towel to keep them warm while you cook the remaining batter. Repeat the process until all the batter is used.
  • Serve the pancakes warm with your favorite toppings such as fresh fruits, a drizzle of honey, yogurt, or maple syrup.
